Chicory: Another summertime plant (c) 2008  Mark Spreyer

Chicory

 Chicory (Cichorium intybus)

Chicory has a lovely blue blossom that stands out in a summer field that is often dominated by yellow and white wildflowers.

Its leaves are surprisingly similar to a dandelions but chicory grows to be one to three feet tall. Chicory blooms throughout the summer.
Rabbits and deer eat the leaves and stems; bees, butterflies and moths collect nectar from the blossoms; and goldfinches, turkeys and mice feed on the seeds.
